SPINACH ARTICHOKE DIP



Preheat oven to 375°
Soak 2 cups cashews overnight or in hot water for 30-60 min.
Drain water and add to food processor
Add 3 cloves garlic
Add 1/4 cup cashew milk
Add 1/4 cup avocado or olive oil
Blend
Salt and pepper to taste
Add artichoke
Steam 3 artichokes (cut stems) for 30 min. Peel back leaves (save for dipping)
Cut out fuzz and dice artichoke hearts
Sauté 1 white onion
Add 16oz. fresh spinach
Add artichoke
Add cashew cream
Add to baking pan, drizzle avocado oil on top and bake for 15-20 min.
Serves 6-8
